Description
**From a vine growing family** where the grandfather was one of the founder members of ***Sieur D’Arques***, it was in 1993 that **Thierry and Patrice Cathala** took over their father’s vines on the commune of Bouriege in the Haute-Vallee. </br></br>Desiring to develop their vineyard, they later acquired the **Domaine de la Sauzede** which was essentially comprised of fields. They planted vines, the soil was very good and a terroir of choice for the Chardonnay where it expresses itself marvelously. It was only natural that the plot of **Thierry et Patrice Cathala** was selected as the La Serpent Clocher. A tiny village in the Haute Vallee with its magnificent 17th century chateau, situated at the entrance of the village, a miniature of the chateau of Versailles. Its church is dedicated to St Etienne, built by Hercule de Dax, Lord of La Serpent, who was the last of the house of Dax to be buried there. The plot is situated on the commune of La Serpent, on the Haute Vallee terroir, the southern part of the appellation. </br></br>The terroir stretches over the foothills of the **Pyrenees** where altitude plays an important role, bringing **cooler temperatures** than the three other terroirs (3 to 4°C less) With the **high altitude** (370 to 470m) on **clay-limestone soil** and with **good water reserves**, this vineyard from part of the **late-maturing** Haute-Vallee terroir. The spread of temperatures between night and day at harvesting time means that picking takes place between 15 to 20 days later than the warmer zones of the **Limoux** appellation. </br></br>***The flora present around the vines consists of evergreen oak, chestnut and pines in some zones.***
